Muffin Cooking Directions: Makes approx. 12 x 3" muffins (cupcake size)

  • Preheat oven to 400 degrees.
  • Spray 3” diameter muffin tins with non stick cooking spray.
  • In a large bowl, beat together 1 EGG, 1/3 cup MILK, 2 tablespoons OIL.
  • Add Miffy’s Muffin Mix. Stir until incorporated.
  • Mix in fruit.
    • For Pumpkin Spice muffins, add 1 1/4 cup (10 oz) canned pumpkin. **Fold in optional flavor twists.
    • For Apple Spice, mix in 2/3 cup applesauce and 2 peeled, chopped apples. **Fold in optional flavor twists.
    • For Carrot Spice or Zucchini Spice muffins, stir in 2/3 cup apple sauce and EITHER 1.5 cups grated carrot OR 1.5 cups grated zucchini (1/2 cup raisins make the carrot and zucchini muffins sing!).
  • Spoon into 3" cupcake sized muffin tins between 1/2 & 2/3 full. Sprinkle with cinnamon sugar.
  • Bake for 16 - 18 minutes.

Mini Muffins Cooking Directions: Bake for 15 min. Makes 30

Muffin Popper Cooking Directions: Reduce heat to 390 degrees. Makes approx. 60
Bake for 12 - 14 min. (Apple Spice bake for 15 minutes)

Mini Loaf: Bake for 18 - 20 min. Makes 6.

Loaf: Reduce heat to 350 degrees. Bake for 45-50 min.
