Muffin Cooking Directions: Makes approx. 12 x 3" muffins (cupcake size)

  • Preheat oven to 400 degrees.
  • Spray 3” diameter muffin tins with non stick cooking spray.
  • In a large bowl, beat together 1 EGG, 1/3 cup MILK, 2 tablespoons OIL.
  • Add Miffy’s Muffin Mix. Stir until incorporated.
  • Mash 3 over ripe bananas and stir in with batter. **Optional: add extras.
  • Spoon into muffin tins between 1/2 & 2/3 full. Sprinkle with cinnamon sugar.
  • Bake for 17 - 19 minutes.
Mini Muffins Cooking Directions: Bake for 15-16 min. Makes 30

Muffin Popper Cooking Directions: Reduce heat to 390 degrees. Makes approx. 60
Bake for 13 - 15 min. (Banana Blueberry...bake for 16 min).

Mini Loaf: Bake for 18 - 20 min. Makes 6.

Loaf: Reduce heat to 350 degrees. Bake for 45-50 min.

INGREDIENTS: GLUTEN FREE FLOUR & OAT MIX (BROWN RICE FLOUR, POTATO STARCH, OAT BRAN, OATS, TAPIOCA FLOUR), BROWN SUGAR, SUGAR, CINNAMON, ALUMINUM FREE BAKING POWDER (SODIUM ACID PYROPHOSPHATE, SODIUM BICARBONATE,CORN STARCH, MONOCALCIUM PHOSPHATE), XANTHAN GUM, SALT.
